The recipe for crostone with black cabbage

Crostone with black cabbage is a traditional Tuscan appetizer made with simple, seasonal ingredients. This very tasty dish has an extremely simple preparation and is served during the winter months when the cabbage is harvested.

Ingredients

  • black cabbage (at least 1 per person)
  • PDO Tuscan bread
  • extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper

Preparation

Clean the cabbage by removing the hard stems, wash it and boil it in plenty of salted water.

Meanwhile, cut the bread into not-too-thin slices, toast it and spread garlic on it.

After about an hour, the cabbage will be cooked and should be removed from the heat, well drained and laid on the bread slices. Add plenty of oil and black pepper (best if freshly ground) and serve hot.
